Editor's Note
Founded in 1978, when Sapporo had only a handful of soup curry shops — one of the oldest surviving. The name is Swahili for 'slowly, gently'; the owner's inspiration was a spicy soup he met traveling in Africa. Garlic, ginger and onion are cooked to a paste and joined with Japanese dashi in a low-oil soup that preserves the genre's original form. In Shiroishi Ward.
