Editor's Note
A yakuzen (medicinal-herb) soup curry shop founded in 2005 in Nishi Ward. Its method — extracting dashi fast over very high heat — yields a clear, light soup designed to be eaten every day, a deliberate counterpoint to Sapporo's rich mainstream. Three soups: original, yakuzen, coconut. The fried-hormone topping is the house original.
