Editor's Note
The shop that coined the very word 'soup curry' in 1993. Owner Taizan Shimomura built his recipe on soto ayam, the Indonesian chicken soup he met while traveling — making this one of the origin points of the whole culture. Spice levels run through seven stages from 'Awakening' to 'The Void', gaining ingredients and depth as you climb. A pilgrimage site in Shiroishi Ward.
