Founded in 2007, Suage is the home of the deep-fried-skewer style: ingredients are fried without batter to bring out their sweetness, cut small and served on bamboo skewers. The soup layers chicken stock and tomato over onions sauteed for more than eight hours. Local ingredients like Shiretoko chicken are the backbone. One of the busiest queues in the Susukino area, with branches now in Tokyo and overseas.
