Editor's Note

A legend among Sapporo curry lovers. After 23 years it closed in 2017 — then returned the following year near Sapporo Station's north exit, with the original owner's full cooperation in recreating the taste. The soup takes four days: simmered, steamed, strained by hand and rested, with most of the oil removed for a strikingly clean finish. The rich 'Re SAVoY' (2023) is its deliberate opposite.
