Editor's Note
Born in a Bali restaurant in 2000, brought to Sapporo in 2003. Chicken-based soup with tomato, fruit and cabbage; spices ground just before cooking; coconut-tinted yellow rice (nasi kuning); and a dining room full of Balinese art. The Tsukisamu main shop is the home of the notorious 1-kg-rice challenge bowl, the 'Kintamani'.
