Editor's Note
A Maruyama-Nishimachi institution since 1993 and a Tabelog 'Top 100' curry shop. Vegetables and fruit are cooked down to a puree for an extraordinarily rich European-style roux — crowned, ideally, with the big cheese omelet topping.
